Texas Caviar

Ingredients:

  • 2 cans black beans, drained and rinsed

  • 3 cans white corn, drained

  • 2 -16 oz cans diced Rotel® tomatoes

  • 2 cups fresh tomatoes, chopped

  • 1 bunch green onions, chopped

  • 1 yellow pepper, chopped

  • 1 green pepper, chopped

  • 1 red pepper, chopped

  • 1 bunch cilantro, chopped

  • 1 garlic clove, minced

  • 1 lemon, juiced

  • ¼ cup red wine vinegar

  • ½ tsp red pepper (cayenne)

  • ½ tsp garlic powder

  • ½ tsp chili powder

  • ¼ tsp salt

Preparation:

  1. Mix all ingredients together and serve with chips.

  2. Keep in the refrigerator.
