Strawberry Cake

Ingredients:

  • 1 box white cake mix

  • 1 cup fresh strawberries – chopped, mashed and well-drained

  • ½ cup chopped pecans

  • 4 eggs

  • ½ cup oil

  • 1 cup whole milk

  • 1  box (3 oz.) strawberry Jell-o gelatin

Preparation:

  1. Preheat oven to 325 degrees. 3 round cake pans.

  2. Blend together strawberries, eggs, milk, oil, Jello gelatin, cake mix and ½ chopped pecans. Mix until well blended. Divide into 3 greased and floured cake pans.

  3. Bake for 30 minutes. Completely cool on wire rack
     

Icing:

  • 1  package (8 oz) cream cheese

  • 1 stick butter

  • ¾ cup chopped pecans

  • 3 ½ cup confectioner sugar

  • 1 cup well-drained, chopped strawberries

  • ½ cup pecans  


Cream together the butter and cream cheese until fully creamed. Add sugar, strawberries and pecans and mix well.
