Strawberry Cake
Ingredients:
1 box white cake mix
1 cup fresh strawberries – chopped, mashed and well-drained
½ cup chopped pecans
4 eggs
½ cup oil
1 cup whole milk
1 box (3 oz.) strawberry Jell-o gelatin
Preparation:
Preheat oven to 325 degrees. 3 round cake pans.
Blend together strawberries, eggs, milk, oil, Jello gelatin, cake mix and ½ chopped pecans. Mix until well blended. Divide into 3 greased and floured cake pans.
Bake for 30 minutes. Completely cool on wire rack
Icing:
1 package (8 oz) cream cheese
1 stick butter
¾ cup chopped pecans
3 ½ cup confectioner sugar
1 cup well-drained, chopped strawberries
½ cup pecans
Cream together the butter and cream cheese until fully creamed. Add sugar, strawberries and pecans and mix well.
