Spanish Rice

Ingredients:

  • 1 (15  ounce) can stewed tomatoes

  • 1 ½ cups chicken or vegetable stock

  • 1 ¼ cups rice

  • 1 tablespoon butter

  • 2 teaspoons chili powder

  • ¾ teaspoon oregano

  • ½ teaspoon garlic salt

  • 1 teaspoon cumin
     

Preparation:

  1. In medium saucepan, combine all ingredients (mash tomatoes with potato masher or fork.)

  2. Bring to a boil; reduce heat to low. Cover and simmer 30 minutes or until rice is done, stirring occasionally.
