Salmon with Matzo Crust

Ingredients:

  • 1½  (6-inch) square matzo (1-1/2-oz.), broken up

  • 2 Tbsp. fresh dill or 1-1/2 tsp. dried dill weed

  • ½  tsp. salt

  • ¼  tsp. ground black pepper

  • 3 Tbsp. olive or cooking oil

  • 4 (4 to 5-oz.) skinless salmon fillets, 1-inch thick

  • Lemon wedges (optional)

  • Fresh dill sprigs (optional)

  • Steamed green beans (optional)

Preparation:

  1. Preheat oven to 450 degrees F. In blender or food processor combine matzo, dill, salt, and pepper. Cover; blend or process until coarse. Transfer to sheet of waxed paper or shallow container.

  2. Brush shallow baking pan with oil. Brush fish with oil. Roll in crumb mixture; place in prepared pan. Drizzle with remaining oil.

  3. Bake, uncovered, 10 to 12 minutes or until fish flakes easily when tested with fork. Serve with lemon wedges, fresh dill sprigs, and steamed green beans. Makes 4 servings.
