Potato Salad

Ingredients:

  • 2 ½ lbs. red potatoes, peeled and cubed

  • 4 eggs

  • 1 cup mayonnaise

  • 2 tbsp sweet relish

  • 2 tsp Yellow mustard

  • 1 tsp Dijon mustard

  • ¼ tsp salt

  • ¼ tsp onion powder

  • ⅛ tsp ground black pepper

  • ⅛ tsp celery salt

  • Smoked paprika (for garnish)
     

Preparation:

  1. Place the steamer basket inside the pressure cooker and add water, potatoes, and then eggs.

  2. Set pressure cooker for 4 minutes on high pressure. (If you own an Instant Pot like me, just press the manual button and then set time to 4 minutes.)

  3. Do a quick release on pressure cooker and remove potatoes and eggs and let cool.

  4. Make a dressing of mayo, Sweet relish, mustards, salt, onion powder, celery salt and pepper.

  5. Peel and chop eggs.

  6. Mix potatoes, chopped egg, and dressing in a large bowl.

  7. Garnish with a little paprika  if desired.

  8. Chill for an hour or two before serving.

Note: You can certainly boil the potatoes and eggs the old fashioned way, but I like using the Instant Pot because it makes it so much easier!
