Potato and Egg Casserole

Ingredients:

  • 12 eggs

  • 1 cup sour cream

  • 1 tsp. seasoned salt (or, to taste)

  • ¾ stick butter

  • 2 cups shredded hash brown potatoes (thawed)

  • ¼ cup chopped onion

  • 1 cup grated sharp cheddar cheese

Preparation:

  1. Preheat oven to 350°. Spray two-quart casserole dish with cooking oil. Beat eggs, sour cream and salt together. Set aside.

  2. Melt butter in a medium skillet and lightly sauté onion. Add onions to thawed potatoes. Stir to mix.

  3. Pour in egg mixture and lightly stir to blend ingredients. Pour into casserole dish. Sprinkle grated cheese over casserole.

  4. Bake at 350° for about 45-55 minutes or until knife comes out clean when inserted
