Monterey Jack Turkey Burgers with Zucchini-Tomato Sauté

Ingredients:

  • 1½ lbs ground turkey

  • ¾ cup grated Monterey Jack cheese

  • 1½ teaspoon dried oregano

  • 1 teaspoon salt

  • ¼ teaspoon black pepper

  • 6 sandwich rolls

  • 3 small zucchini, sliced ¾ inch thick

  • 1 (28 oz.) can whole tomatoes, drained and coarsely chopped

Preparation:

  1. Combine turkey with ½ cup Monterey Jack, oregano, salt and pepper.  Form into 4 patties. Grill or broil until done.  Place in rolls.

  2. In a skillet, sauté zucchini in 1 tablespoon olive oil for 4 minutes.  Stir in tomatoes and ¼ cup Monterey Jack.  

  3. Spoon mixture over burgers or serve on the side.
