Monterey Jack Turkey Burgers with Zucchini-Tomato Sauté
Ingredients:
1½ lbs ground turkey
¾ cup grated Monterey Jack cheese
1½ teaspoon dried oregano
1 teaspoon salt
¼ teaspoon black pepper
6 sandwich rolls
3 small zucchini, sliced ¾ inch thick
1 (28 oz.) can whole tomatoes, drained and coarsely chopped
Preparation:
Combine turkey with ½ cup Monterey Jack, oregano, salt and pepper. Form into 4 patties. Grill or broil until done. Place in rolls.
In a skillet, sauté zucchini in 1 tablespoon olive oil for 4 minutes. Stir in tomatoes and ¼ cup Monterey Jack.
Spoon mixture over burgers or serve on the side.
