Mona's Vegetable Beef Soup

Ingredients:

  • 2 packages stew meat

  • 8 cups water

  • 6 large carrots

  • 6 large celery stalks

  • 6 medium white potatoes

  • 1 medium white onion

  • 1 bell pepper

  • 1 small can kernel corn

  • 1 small can green peas

  • 1 small can tomato sauce

  • Salt, black pepper, paprika, garlic powder and cayenne pepper to taste
     

Preparation:

  1. In a stock pot, combine water and stew meat.  Bring to a boil, reduce heat and simmer for 30 minutes, covered.  After cooking meat, skim foam off the top.  Add salt, black pepper, garlic powder and cayenne pepper to taste and continue to simmer for 15 minutes.  

  2. Add tomato sauce, onions, bell pepper, carrots, potatoes, and celery.  Simmer for 30 minutes.

  3. Add peas and corn to soup.  Simmer for approximately one hour until carrots, meat and potatoes are tender.
