Mayo Parmesan Chicken
Ingredients:
2 chicken breasts (skinless, boneless) (about 8 oz each)
4 tbsp mayo
¼ cup parmesan cheese (shredded)
Salt & Pepper
Preparation:
Preheat oven to 350°F (180°C)
Wash chicken breast under cold running water and pat dry with a paper towel. Season generously with salt and pepper.
In a medium-sized bowl, use your a basting brush (your hands would work too) to cover the chicken breasts with mayonnaise. Make sure the chicken is fully covered in mayo in a nice even layer.
Lightly grease a baking dish with cooking spray and place the chicken breasts in it. Sprinkle equal amounts of shredded parmesan cheese onto each chicken breast.
Bake in a preheated oven for 40-45 minutes until the chicken is fully cooked and the parmesan cheese has turned golden brown.
