Luscious Lemon Cake
Ingredients:
1 ¾ cups sugar
¼ cup butter
1 (8 oz.) package cream cheese
2 eggs
1 tbsp grated lemon peel
2 tsp. vanilla
2 ¾ cups all purpose flour
¾ cup milk
1 tbsp lemon juice
1 tbsp baking powder
1 tsp. baking soda
½ tsp. salt
Preparation:
Heat oven to 325°.
Grease and Flour a 10 or 12 cup Bundt® Pan.
In a medium bowl, sift together flour, baking powder, baking soda and salt together. Set aside.In a large mixing bowl, mix sugar, butter and cream cheese until very light and fluffy (about 6-8 minutes).
Add eggs, lemon peel, and vanilla; mix well.
Add flour mixture alternately with milk, beginning and ending with flour. Mix well.
Spoon into prepared pan and bake for 50 to 55 minutes or until toothpick inserted in center of cake comes out clean. Cool 10 minutes and remove cake onto a cooling rack.
Glaze:
1 cup sugar
¼ cup lemon juice
2 tablespoons butter
In a small saucepan, bring all ingredients to a boil. reduce heat and simmer for 5 minutes. Using a basting brush, apply the glaze to warm cake.
