Leach's Peach Cobbler

When it comes to soul food in Memphis, it was hard to beat Buntyn’s and Leach's Family Restaurant. Unfortunately, both restaurants are closed now but their recipes live on!  This is their peach cobbler recipe.  Simple but delicious!

Ingredients:

  • 2 prepared 9-inch pie crust rounds

  • 1 can (approximately 29 ounces) sliced peaches

  • 1 cup sugar

  • 2 teaspoons nutmeg

  • ½ cup butter  

Preparation:

  1. Lightly grease an 8-by-12-inch pan. Pour peaches into pan. Mix together sugar and nutmeg. Sprinkle over peaches. Cut up butter and sprinkle over peaches (or melt the butter and pour it over peaches).

  2. Cover top with pie crusts, breaking some into pieces to sprinkle over top.  

  3. Bake in preheated, 325-degree oven for 35 to 45 minutes, or until crust is golden brown.

    Serves 8 to 12.
