Instant Pot Sloppy Joes

Ingredients:

  • 1 lb. lean ground beef

  • 1 onion , diced

  • 1 green bell pepper , diced

  • 3 garlic cloves , minced

  • ½ cup ketchup

  • 1 tablespoon tomato paste

  • 1 tablespoon soy sauce 

  • 1 tablespoon Worcestershire sauce

  • 1 tablespoon brown sugar

  • 1 teaspoon Dijon mustard

  • ¼  cup water

  • 1 tablespoon olive oil

  • Kosher salt & ground black pepper to taste

  • Optional: 2 - 3 drops liquid smoke

Preparation:

  1. Press sauté button and allow to heat until indicator says HOT).

  2. Season ground beef generously with kosher salt and freshly ground black pepper. Add 1 tbsp olive oil to the Instant Pot and add ground beef. At the 5-minute mark, Add onion and green pepper and saute for 2 minutes or until meat is no longer pink and juices have cooked away. Add in minced garlic, then saute until fragrant (roughly a minute).

  3. Add 1 tbsp  brown sugar, soy sauce, Worcestershire sauce, and water.  Deglaze bottom of the pot by scrubbing all the flavorful brown bits with a wooden spoon.

  4. Layer tomato paste, Dijon mustard, and ketchup on top. Do not mix. Close lid and pressure cook at High Pressure for 5 minutes + 10 minutes Natural Release. After 10 minutes, turn knob to venting position to release remaining pressure. Open the lid carefully.

Cook’s Note: The Sloppy Joe sauce will be a little runny.  Give it a quick stir and cook for another few minutes on saute. Now is a good time to add in the optional liquid smoke if desired. Let simmer until desired consistency.  Taste and season with more kosher salt and black pepper if necessary.
