Instant Pot Honey Bourbon Chicken

Ingredients:

  • 1 lb boneless skinless chicken breasts

  • ½ yellow onion (chopped)

Ingredients:

  • ¼ cup water

  • ¼ cup bourbon

  • ¼ cup soy sauce

  • ¼ cup ketchup

  • ¼ cup brown sugar

  • 1 ½ tablespoons honey

  • ½ tsp garlic powder

  • ½ tsp red pepper flakes (use less if you’re sensitive to spice)

  • Dash salt and pepper

  • 2 tablespoons cornstarch

  • 1 tablespoon water

  • Green onion, for garnish

Preparation:

  1. Place raw chicken and chopped onions into the bottom of the pressure cooker.

  2. Combine all ingredients for the sauce (except cornstarch and 1tbsp water) in a bowl and whisk together until well combined.

  3. Pour into the pressure cooker over the top of the chicken and onions. Put the lid on and cook on manual for 15 minutes.

  4. Let the pressure out and carefully remove the lid. Remove the chicken and shred with two forks. Return the chicken into the sauce and set the instant pot to the sauté setting. Now mix in cornstarch and 1 tbsp water until sauce is thickened (approximately 2 minutes).

  5. Serve over white or brown rice with fresh green onions for garnish. Enjoy this easy and delicious meal that your whole family will love!
