Instant Pot Cashew Chicken

Ingredients:

  • 2 lbs. boneless skinless chicken breasts (About 4 pieces)

  • ½ tsp black pepper

  • 1 Tbsp canola oil

  • ½ cup low sodium soy sauce

  • 4 Tbsp rice wine vinegar

  • 4 Tablespoons ketchup

  • 2 Tablespoons sweet chili sauce

  • 2 Tbsp brown sugar

  • 2 garlic cloves minced

  • 1 tsp grated fresh ginger

  • ¼ tsp red pepper flakes

  • 1 cup cashews

  • 2 Tablespoons Cornstarch

  • 2 Tablespoons water

Preparation:

  1. Place chicken in Instant Pot

  2. Combine soy sauce, vinegar, ketchup, sweet chili sauce sugar, garlic, ginger, pepper flakes, in a small bowl; pour over chicken.

  3. Cook on Manual setting for 15 minutes. Carefully release pressure. Remove chicken from pot and shred with two forks and return to pot.  Add Cashews.

  4. Set Instant Pot to Sauté.  Combine cornstarch and water and add to sauce when it begins to simmer.  Stir until thickened (approximately 2 minutes)

  5. Serve over white rice.

  6. Makes 4-6 servings.
