Instant Pot Beef Stew

Ingredients:

  • 1 package stew meat (cut to bite size pieces)

  • 4 cups water

  • 3 large carrots

  • 3 large celery stalks

  • 3 medium white potatoes

  • 1 medium white onion

  • 1 bell pepper

  • 1 can green beans, drained

  • 1 can kernel corn, drained

  • 1 can green peas, drained

  • 1 can tomato sauce

  • 2 tsp Salt

  • ½ tsp black pepper

  • 1 tsp paprika

  • 2 tsp garlic powder

  • ⅛ tsp cayenne pepper

Preparation:

  1. In a Instant Pot, combine water and stew meat.  Add carrots, celery, onion, bell pepper, potatoes and spices.  Pour tomato sauce over the top, do not stir.  Add

  2. Add green beans, peas and corn to pot.  

  3. Secure the lid on the Instant Pot and cook for 35 minutes on “Meat/Stew” setting. Natural release for 10-20 minutes.  Enjoy!

  4. This makes a very full pot of stew that goes right to the maximum line.  Don’t worry, It’s fine!

If you like your stew to have that “hearty, warm, and spicy” feel to it, use 1 TSP black pepper and ¼ tsp cayenne.  That’ll do it.
