Hot Buttermilk Cornbread

Ingredients:

  • 2 cups buttermilk

  • 3 cups creamed corn

  • 2 cups cornmeal

  • 1 ½ teaspoons salt

  • 3 tablespoons baking powder

  • 4 eggs, beaten

  • ¾ cup olive oil

  • 2 cups grated sharp cheddar cheese

  • 8 ounces diced green chiles

Preparation:

  1. Preheat oven to 350°.  Mix all ingredients except cheese and chiles.  Pour half of the batter into a greased 9x13 inch baking dish.  

  2. Place the chiles on the batter and sprinkle half of the cheese.  Pour in the remaining batter.  Add remaining cheese.  

  3. Bake approximately 1 hour.

  4. Serves 12
