Frozen Mojito

Ingredients:

  • 1 cup mint syrup (see note)

  • ¼ cup fresh lime juice

  • ¾ cup rum

  • 1 tbsp. peppermint schnapps

  • Ice to fill blender

  • Fresh mint for garnish

Preparation:

  • Mix all ingredients in blender and process until smooth.

  • Garnish with mint sprig. Serves 4.

Note: To make mint syrup, combine 3 cups of water and 3 cups of sugar in a saucepan. Bring just to a boil and remove from heat when it changes from cloudy to clear. Add a big handful of fresh mint and allow to infuse for about 10 minutes. Strain mint and cool syrup before using. Keeps in the refrigerator for a couple of weeks.
