Frozen Mojito
Ingredients:
1 cup mint syrup (see note)
¼ cup fresh lime juice
¾ cup rum
1 tbsp. peppermint schnapps
Ice to fill blender
Fresh mint for garnish
Preparation:
Mix all ingredients in blender and process until smooth.
Garnish with mint sprig. Serves 4.
Note: To make mint syrup, combine 3 cups of water and 3 cups of sugar in a saucepan. Bring just to a boil and remove from heat when it changes from cloudy to clear. Add a big handful of fresh mint and allow to infuse for about 10 minutes. Strain mint and cool syrup before using. Keeps in the refrigerator for a couple of weeks.
