Classic Shortbread

Ingredients:

  • ¾ cup butter, room temperature

  • ½ cup powdered sugar

  • ½ tsp vanilla

  • 1½ cups flour 

Preparation:

  1. Preheat oven to 325 degrees.

  2. Cream butter until light.  Beat in powdered sugar, then vanilla.  Work in flour.

  3. Knead dough on an unfloured board until smooth.

  4. Firmly press dough into pan.  Use a fork to poke holes in surface of the dough.  

  5. Bake 30-35 minutes or until lightly browned.  Let cool in pan for 10 minutes.  

  6. Loosen the edges with a plastic knife and invert onto a cutting board.  Cut into serving pieces while warm.
