Chilaqies el Rancho Merlita
Ingredients:
8 eggs
1 cup milk
1 container (16 oz.) cottage cheese
1 pkg. (8 oz.) shredded sharp cheddar cheese
8 corn tortillas (6 inch), cut into 1-inch pieces
1 can (4 oz.) chopped green chiles, undrained
½ cup chopped fresh cilantro
2 green onions, thinly sliced
Preparation:
Whisk eggs and milk in large bowl until blended. Add remaining ingredients; mix well. Pour into 2 (9-inch) pie plates sprayed with cooking spray.
Refrigerate at least 8 hours or overnight.
Preheat oven to 350ºF. Bake chilaquiles, uncovered, 50 min. or until puffed and golden brown.
