Chilaqies el Rancho Merlita

Ingredients:

  • 8 eggs

  • 1 cup  milk

  • 1 container  (16 oz.) cottage cheese

  • 1 pkg.  (8 oz.) shredded sharp cheddar cheese

  • 8 corn tortillas (6 inch), cut into 1-inch pieces

  • 1 can  (4 oz.) chopped green chiles, undrained

  • ½ cup chopped fresh cilantro

  • 2 green onions, thinly sliced

Preparation:

  1. Whisk eggs and milk in large bowl until blended. Add remaining ingredients; mix well. Pour into 2 (9-inch) pie plates sprayed with cooking spray.

  2. Refrigerate at least 8 hours or overnight.

  3. Preheat oven to 350ºF. Bake chilaquiles, uncovered, 50 min. or until puffed and golden brown.
