Chicken Cutlets

Ingredients:

  • 4 chicken cutlets (2 Breasts)

  • 2 eggs

  • 1 cup flour

  • ½ cup breadcrumbs

  • ¼ cup Panko

  • ½ tsp paprika

  • ¼ tsp garlic powder

  • ¼ tsp onion powder

  • ¼ tsp italian seasoning

  • ⅛ tsp cayenne

  • Salt and pepper to taste

  • Shredded Parmesan Cheese
     

Preparation:

  1. Slice the chicken breasts and place between two pieces of plastic wrap. Use a rolling pin or skillet to pound the breasts thin.  Season the chicken with salt and pepper.

  2. Using three small shallow containers, place flour in one, whisked eggs in another, and combine the breadcrumbs and seasonings in the third.  

  3. Preheat your air fryer to 400 degrees F.

  4. Dredge both sides of each chicken cutlet in the flour, eggs, and breadcrumbs; shaking off excess as you go.

  5. Place a piece of air fryer parchment in the basket or spray your air fryer with cooking spray.   If using a oven style you can place all of the cutlets in the basket at one time.  If you are using a drawer style do two chicken cutlets in the basket.

  6. Cook for 11 to 13 minutes, flipping halfway through. In the last minute or so, add the parmesan cheese and continue cooking until the cheese has melted.

  7. Check the internal temperature to make sure it is at 165 degrees F. For my air fryer, 12 minutes was perfect, but all vary a little differently.

Cooks Notes:

  • The plastic rectangle food delivery containers work great to bread your chicken.

  • If you don’t want the Italian flavor, omit the Italian seasoning and parmesan cheese.
