Buttermilk Biscuits
Ingredients:
2 cups all-purpose flour
2 teaspoons baking powder
¼ teaspoon baking soda
¼ teaspoon salt
3 tablespoons plus 1 teaspoon chilled butter, cut into small pieces
¾ cup low-fat or fat-free buttermilk
Preparation:
Preheat Oven to 450°.
Lightly spoon flour into dry measuring cups; level with a knife. Combine flour and next 3 ingredients in a bowl. Cut in butter with a pastry blender or 2 knives until mixture resembles coarse meal. Add buttermilk; stir just until dry ingredients are moist.
Turn dough out onto a lightly floured surface; knead 4 or 5 times. Roll dough to a ½ inch thickness; cut with a 2 ½ -inch biscuit cutter (Tip: don't twist the biscuit cutter; this could seal the edges and hinder the biscuits from rising). Place on a baking sheet. Bake at 450° for 10 to 12 minutes or until biscuits are golden.
Makes 1 dozen biscuits.
