Black Bean Cilantro Rice

Ingredients:

  • 2 cups parboiled rice

  • 1 (15 oz) can black beans, drained and rinsed

  • ¼ cup unsalted butter, diced

  • 32 oz chicken broth

  • 1 tbsp kosher salt

  • 1 tsp ground black pepper

  • 1 tsp garlic powder

  • ½ tsp onion powder

  • 1 cup cilantro, finely chopped
     

Preparation:

  1. Preheat oven to 350F. Lightly coat a 13x9 casserole dish with cooking spray.  

  2. Spread rice in dish.  Top with black beans and dot with butter.

  3. In a medium mixing bowl, combine broth, kosher salt, pepper, garlic powder and onion powder.  Pour over rice and beans.

  4. Cover tightly with heavy aluminum foil and bake for 1 hour and 15 minutes or until rice is tender.  Remove foil and stir in chopped cilantro to mix and fluff rice.
