Black Bean Cilantro Rice
Ingredients:
2 cups parboiled rice
1 (15 oz) can black beans, drained and rinsed
¼ cup unsalted butter, diced
32 oz chicken broth
1 tbsp kosher salt
1 tsp ground black pepper
1 tsp garlic powder
½ tsp onion powder
1 cup cilantro, finely chopped
Preparation:
Preheat oven to 350F. Lightly coat a 13x9 casserole dish with cooking spray.
Spread rice in dish. Top with black beans and dot with butter.
In a medium mixing bowl, combine broth, kosher salt, pepper, garlic powder and onion powder. Pour over rice and beans.
Cover tightly with heavy aluminum foil and bake for 1 hour and 15 minutes or until rice is tender. Remove foil and stir in chopped cilantro to mix and fluff rice.
