Barbecue Marinade

(Great for Pork or Chicken)

Ingredients:

  • 3 tbsp balsamic vinegar

  • 3 tbsp olive oil

  • 2 tbsp ketchup

  • Juice from one orange

  • 2 tsp. thyme

  • ½ tsp. kosher salt

  • Freshly ground black pepper

Preparation:

  1. In a large bowl, whisk together the vinegar, oil, ketchup, orange juice, thyme, salt and a few grinds of pepper. Pour over meat in a marinator. Let sit for 30 minutes to four hours. The longer it marinates, the more you will experience the flavor.

  2. Preheat broiler on high. Broil for 10 minutes, turn and cook for another five minutes. Turn once again and cook for five more minutes and remove from oven. If the meat is thick cut, add an additional five minutes or so.
